How to Make Stuffed Potato Paratha

Alu roti or stuffed potato paratha is a fairly common dish of the Indian subcontinent and can be easily made at home.  It has few ingredients and makes a good change from meat dishes.


4-6 potatoes. Boil, skin and mash them.

Salt as desired

1 teaspoon red chili powder

1 onion chopped very finely.

1 teaspoon white cumin seed powder (zeera)

Bunch of fresh coriander leaves chopped finely.

3-4 green chilies, chopped in small pieces.

A little ginger thinly sliced (optional)

Wheat flour

Oil for frying


Put flour in a bowl. Add a little salt and mix well. Gradually add water and knead well till it turns into soft dough. Cover with a damp cloth and keep aside.

Mash the potatoes and add all the ingredients into it. Mix well with your hands till it has a smooth, mixed look.

Divide the dough into 12 small equal parts. Roll each part into a small ball. With a rolling pin, flatten the ball into a small disc like shape.

Place some of mashed potato mixture over it. Cover it with another flattened dough of the same size and press the edges together. Don’t leave the edges empty but spread the mixture equally.

It is important not to make the roti too heavy as it might break while you are transferring it to the griddle.

Sprinkle flour on the working top and roll the rolling pin over potato filled dough till it becomes round and bigger in diameter. It should be thin with all edges pressed together firmly to avoid spilling of potato mixture.

Heat the griddle (flat cooking surface) and oil it slightly.

Carefully pick the stuffed roti and place it on the hot griddle.

Allow to cook for a while and then turn it over.

Keep smearing oil on edges and on roti surface to give it a crisp texture.

Turn over once more till the roti is golden brown.

Keep dividing the dough into equal balls and stuffing them with potato mixture. Repeat the process of flattening them and cooking them over the hot griddle.

Remove from griddle and serve hot with mint chutney or yogurt. Children might prefer to eat it with ketchup.

Boiled and mashed chicken can also be added to the basic potato mixture for potato-chicken stuffed paratha.

Aloo roti is fairly easy to make. All you need is a few potatoes and some basic spices and herbs. The basic ingredients are almost similar but you can add garam masala, chat masala, anar dana (dried pomegranate seeds) or mint leaves to make your aloo paratha more special.
